I love making Chia Seed Pudding because its so easy and only 3 ingredients! Chia Seeds are packed with protein, fiber, antioxidants, omega-3 fatty acids and micronutrients. Make this recipe the night before and you will have breakfast ready to go for the week!
Yield: 1 Jar
Time: 10 mins
1/2 Cup Unsweetened Coconut Milk
2 Tbsp Chia Seeds
2 tsp Maple Syrup
Combine all ingredients in jar.
Allow mixture to sit for 5 minutes.
Stir mixture one more time to break up any chia seeds stuck together.
Place lid on jar, place in refrigerator and allow pudding to sit for 1 hour or overnight.
Serve cold with your favorite toppings: strawberries, blueberries, mango or granola!
